“It all started on a trip to deepest Galicia, where the old farmers still look out from the corners of windows, wary that someone or something might come and snatch away their hard work. That day, in the Valley of Culleredo, a special density filled the air, and an unconditional nobility united man and ox.” This is how José Gordón remembers the day he bought his first ox. The boy who fetched and carried jugs of wine between the tables of the old family outdoor restaurant at the beginning was El Capricho, and that day the young man who would later start experimenting with the grill discovered an almost obsessive passion for finding the right ox, for rearing it in the countryside, for achieving a precise ageing of the meat, for making the perfect roast. That passion has been the basis of the history of El Capricho, a project which is constantly evolving.
